Many kids suffer from diabetes. However, they can still enjoy their favourite foods, if you can learn to use these great diabetes recipes free, many of which you can find online. ‘Chicken Waldorf Salad Sandwiches’ – 4 6-ounce chicken breast pieces (skinless and boneless), cut in half, fat free chicken broth, ¼ cup mayonnaise (non-fat), ¼ cup sour cream (non-fat), 2 teaspoons orange zest (grated), 3 tablespoons juice of fresh orange, I medium apple, cored, peeled and diced, 2 celery stalks diced in ¼” pieces, 12 thinly sliced whole wheat bread, 6 fresh lettuce leaves. Take a pan. Place chicken breasts in it and cover with broth. Bring to a boil, simmer and cook for 8-10 minutes. When chicken is done, allow it to cool. Then dice into small bits. Take a small bowl. Blend together sour cream, mayonnaise, orange zest and orange juice. Add this dressing to the cooked chicken bits. Stir in the celery and apple cubes. Take the slices of bread. Place a lettuce leaf on each slice. Top with chicken salad. Cover with the second slice of bread. Cut sandwiches in halves. Wrap with plastic wraps and refrigerate. This easy to make and delicious sandwich can make a great school lunch also.
